Who Knew!!!

March 22, 2017–So some of you know that not only do I bake but I also cook. I normally don’t photograph the food pictures because they don’t look as appetizing as they taste but I had to share this one.

I decided to join one of my friends on her low carb diet during the month of March. It was supposed to be a low starch diet for Lent but that’s another story 🙂

Surprisingly I have not missed the french fries, hot buttered rolls, potatoes, pasta, potato chips, ………. sorry I went into carb bliss for a minute.
I made an awesome homemade pizza back in Feb but it contains all purpose flour which is a no-no for low carb eating.
Not being able to eat carbs has FORCED ME, or should I say, allowed me, to expand my cooking horizons.  I will definitely continue to make some of the dishes I’ve tried.  In that category I add Cauliflower Pizza!!!!  Who knew?!?!?
I can’t say enough about it.  I’m almost tempted to say that it is better than a regular pizza—it is definitely more healthy and as good.  Numerous recipes on the internet so if you have about 30-45 minutes I HIGHLY recommend you make your own cauliflower pizza.  You will not regret it!

Cauliflower Pizza (before toppings) with grated parmesan and mozzarella cheese and various herbs and spices.  You can put whatever you want on top.

I decided to add fresh mozzarella, parmesan, Mexican and feta cheeses, artichokes, sun-dried tomatoes, chopped garlic and kalamata olives.  Mmmm!

The ‘diet’ has not been very hard for me and I’ve got to try some new recipes. I made the cream cheese pancakes for breakfast–pretty fast and filled me up. I made a tray of the breakfast frittatas (eggs, red and yellow peppers, bacon, feta and mexican cheese, and sun dried tomatoes). I slice it up into individual servings, take it to work, heat it up, and that is my breakfast.
